How the pulp came into our life..

I first heard about almond milk about the same time we made a major shift in my diet towards whole foods, about 10 years ago. The art of mak­ing milk from nuts and seeds has been around me all the time since : hear­ing it from other peo­ple, read­ing it in cook­books – but I some­how always opted for the eas­ier ready-​​made versions, from cheap soy-​​milks to Rice Dream or other indus­trial tetra-​​packed bev­er­ages.

It was only after dis­cov­er­ing raw-​​foodism with my life-​​companion, and the conscience-​​arousing prop­er­ties of this diet and lifestyle, and then restart­ing our sys­tem through a 67 juice-​​fast jour­ney, that we finally made place to almond milk in our life. We ended with huge amounts of pulp stacking-​​up in the freezer, and when there wasn’t enough place for it any­more, we jumped in the water and started cre­at­ing : our first use of the pulp was in an amaz­ing recipe that orig­i­nally calls for sun­flower seeds, but the pulp did the trick and took less dehy­drat­ing time. We tried fer­ment­ing the pulp as well, and when we couldn’t eat any of the result­ing yoghurt any­more, we turned to the web for more inter­est­ing stuff. There are a lot of recipes out there for your almond pulp, and they’re scat­tered all over the place. This is why this place was born : a home for all the pulps, an HQ for this valu­able left­over. All recipes have been tested and tried – or in the process of being tested..
 
I’m not sure whom I should be grate­ful to – prob­a­bly just BE grate­ful for hav­ing been blessed with the abil­ity of mak­ing nut milk… It is one of the best things that hap­pened to us, and surprisingly, we never thought it could have such a sus­tain­able effect on our mood and over­all energy-​​ we often find our­selves ener­get­i­cally roam­ing around, a sat­is­fied grin on our faces, just about half an hour after hav­ing a glass of almond-​​milk con­coc­tion of some kind.
 
We own and man­age a health­food store and organic juice bar, and one of the first items we included in the menu was the Vit­a­m­i­nas, which are excep­tion­ally rich smooth­ies made with almond milk and other yummy stuff in them, named after the Brazil­ian shakes that every­one who’s been to that coun­try is nos­tal­gic about..

If there is one thing I can rec­om­mend any­one to do to start chang­ing their lives towards a bet­ter, healthy & happy life – in addi­tion to at least one green-​​smoothie & green-​​juice per day, of course – is to start putting to profit this gift we’ve been given by nature (the almonds..) and man (the blender..).
