How the pulp came into our life..
I first heard about almond milk about the same time we made a major shift in my diet towards whole foods, about 10 years ago. The art of making milk from nuts and seeds has been around me all the time since : hearing it from other people, reading it in cookbooks – but I somehow always opted for the easier ready-made versions, from cheap soy-milks to Rice Dream or other industrial tetra-packed beverages.
It was only after discovering raw-foodism with my life-companion, and the conscience-arousing properties of this diet and lifestyle, and then restarting our system through a 67 juice-fast journey, that we finally made place to almond milk in our life. We ended with huge amounts of pulp stacking-up in the freezer, and when there wasn’t enough place for it anymore, we jumped in the water and started creating : our first use of the pulp was in an
amazing recipe that originally calls for sunflower seeds, but the pulp did the trick and took less dehydrating time. We tried fermenting the pulp as well, and when we couldn’t eat any of the resulting yoghurt anymore, we turned to the web for more interesting stuff. There are a lot of recipes out there for your almond pulp, and they’re scattered all over the place. This is why this place was born : a home for all the pulps, an

I’m not sure whom I should be grateful to – probably just BE grateful for having been blessed with the ability of making nut milk… It is one of the best things that happened to us, and surprisingly, we never thought it could have such a sustainable effect on our mood and overall energy- we often find ourselves energetically roaming around, a satisfied grin on our faces, just about half an hour after having a glass of almond-milk concoction of some kind.
We own and manage a healthfood store and organic juice bar, and one of the first items we included in the menu was the Vitaminas, which are exceptionally rich smoothies made with almond milk and other yummy stuff in them, named after the Brazilian shakes that everyone who’s been to that country is nostalgic about..
If there is one thing I can recommend anyone to do to start changing their lives towards a better, healthy & happy life – in addition to at least one green-smoothie & green-juice per day, of course – is to start putting to profit this gift we’ve been given by nature (the almonds..) and man (the blender..).
