adapted by Heather Pace
- 1 cup walnuts (soaked)
- 2 cups almond pulp
- 1⁄4 cup extra virgin olive oil
- 3⁄4 tsp sea salt
- 1⁄2 cup raw honey
- 1 cup cacao nibs
Add the almond pulp and mix until blended.
Heather recommends dehydrating the cookies for a maximum of 12 hours to leave them soft and moist, and to try substituting the honey with maple syrup or agave in place of the honey. She also used less salt than called for in the original recipe.
This recipe is from Heather Pace’s blog, Sweetly Raw, and it is originally a Sunrider recipe that was transmitted to Heather by a friend of hers.
The chocolate-chip cookies are the ones at 11 o’clock in the picture..for the recipes to the other treats on this platter, view the original post in Heather’s blog.
