Almond Balls

Almond Balls or Cook­ies
Adapted from a recipe in Jen­nifer Cornbleet’s “Raw Food Made Easy for 1 or 2 Peo­ple

Ingre­di­ents :

  • 2 cup wal­nuts
  • 12 cup almonds
  • 1 cup almond pulp
  • 1 cup Med­jhool dates
  • 12 tsp almond extract
  • Dash salt
  • Coat­ing: ¼ cup ground almonds

Process wal­nuts and whole almonds first in food proces­sor until coarse.

Add rest of the ingre­di­ents except ground almonds and process some more. (Do not over process; you should still see chunks.)

Form bat­ter into balls or cook­ies.

Toss in ground almonds for coat­ing.

Chill 2 hrs before serv­ing.
